Torkoal is a decent choice in the Ubers metagame, as it walls the majority of the tier's most fearsome attackers in Galarian Darmanitan, Zamazenta, and Zacian-C. It also makes good use of its Drought ability, which boosts its Lava Plume attack and guarantees a knockout on Zacian-C or Corviknight after two hits of Rocky Helmet damage. Drought also comes with the added benefit of overriding sand or rain, halting a potential Excadrill or Barraskewda sweep. Lava Plume is chosen as the sole attack due to its high burn chance, which can cripple physical sweepers. Stealth Rock is utilized, as Zacian-C or other attackers will be likely to switch out in the face of Torkoal, allowing for an easy setup. Body Press gives Torkoal the option to OHKO Tyranitar, which is a common switch-in to it. Yawn gives Torkoal the option to punish switch-ins to Eternatus, which would otherwise be very punishing for Torkoal. Rocky Helmet helps to punish U-turn users that would otherwise escape unharmed from Torkoal as it switches in. Heavy-Duty Boots is an alternative item that ensures that Torkoal survives two Close Combats from Zacian-C even if Stealth Rock is up and is useful for switching in and removing entry hazards with Rapid Spin. Shed Shell can be used as a niche option to avoid being trapped by Gothitelle.

Torkoal's poor Special Defense and Speed means it is often unable to do much in the face of special attackers such as Eternatus. As such, special walls such as Reuniclus and Umbreon make for good teammates, benefiting from Torkoal's ability to wall Zacian-C or Zamazenta, which they often cannot stand up to. Teammates that can take advantage of Stealth Rock in order to pick up knockouts such as Eternatus, Zacian-C, and Dugtrio also pair very well with Torkoal's support options. Corviknight also pairs well with Torkoal for its ability to come in easily on Tyranitar and use either Defog or Body Press. Hatterene makes a good partner for Torkoal due to its ability to repel entry hazards and set Trick Room. Charizard with Solar Power makes excellent use of Torkoal's ability to set up sun and can set up sweeps.

I think another possible EV spread could be Bold 252 HP / 160 Def / 96 SpDef. You still prevent Zacian-C's Jolly Close Combat from 2HKOing, but you also prevent uninvested Rotom-W's Hydro Pump from 2HKOing in Sun:

+1 252 Atk Zacian-Crowned Close Combat vs. 252 HP / 160+ Def Torkoal: 145-171 (42.1 - 49.7%) -- guaranteed 3HKO (100.00% chance to 3HKO after accuracy)

0 SpA Rotom-W Hydro Pump vs. 252 HP / 96 SpD Torkoal in Sun: 144-170 (41.8 - 49.4%) -- guaranteed 3HKO (51.20% chance to 3HKO after accuracy)

Another option that could probably be slashed with Yawn is Body Press as it's able to OHKO Tyranitar after Stealth Rock:
252+ Def Torkoal Body Press vs. 252 HP / 0 Def Tyranitar: 376-444 (93 - 109.9%) -- guaranteed OHKO after Stealth Rock (0.00% after accuracy)

160+ Def Torkoal Body Press vs. 252 HP / 0 Def Tyranitar: 352-416 (87.1 - 102.9%) -- 93.8% chance to OHKO after Stealth Rock (0% chance to OHKO after accuracy)

Somehow theres no mention of Sun partners like Charizard. I think Hatterene is a reasonable choice for these teams too. Add minor notes of them to the second section.

Make Body Press the main move and slash Yawn, my experience with using Torkoal and being able to threaten ttar has been considerably more consistent. The main advantage of Yawn is to disrupt switch ins such as Eternatus (which you have already mentioned) but also defensive pokes, so I do believe its best being slashed.

Heavy Duty Boots ensures that Torkoal survives two Close Combats from Zacian-C after Stealth Rock damage
It doesn't take any stealth rock damage with Heavy Boots.
