Thanks to Prankster and Will-O-Wisp, Sableye can limit the common physical attackers in Ubers. Will-O-Wisp allows Sableye to neutralize faster physical attackers like Excadrill, Gyarados, Zacian-C, and Zamazenta, letting it check them or limit their sweeping potential. Encore allows Sableye to disrupt and discourage foes from using setup moves and forces switches. Disable allows Sableye to prevent Choice-locked attackers like Ditto from sweeping by forcing them to use Struggle. Taunt can prevent the foe from using status moves and allows Sableye to weather down passive foes like Corviknight by preventing their recovery. Recover prevents Sableye from being worn down itself and is necessary for it to continually check attackers like Excadrill. Knock Off allows Sableye to deal some damage and remove items from foes, although Foul Play can be chosen instead to generally deal more damage, especially to sweepers with Attack boosts. The EVs maximize physical bulk, and the choice of nature depends on the attacking move chosen, with Impish being preferred for Knock Off and Bold being preferred for Foul Play to reduce damage from opposing Foul Play as well as confusion.

Sableye fits best on teams that require additional insurance against physical sweepers. Its poor stats overall and lack of many resistances mean that it can be overwhelmed quite easily by common special attackers in the tier such as Eternatus and Hydreigon. Zacian-C is a good partner that can pivot in on or revenge kill these threats while checking Dark-types in general, which are immune to Prankster's effects. A Spikes setter like Ferrothorn makes a good partner because Sableye can prevent opposing hazard control with Taunt and by blocking Excadrill's Rapid Spin. Sableye is vulnerable to entry hazards, so a partner that can remove them, such as Corviknight, is necessary. Gothitelle is another great partner, as it can remove troublesome, passive Pokemon that Sableye struggles to outlast, such as Toxapex. If Sableye burns a threat, it could also enable them to be trapped more easily by Gothitelle.

Encore needs to be mentioned since it helps dealing with set up.
Disable needs to be mentioned since it helps offenses be dittoproof.

So my suggestion would be Encore/Disable > Taunt.

Make sure to slash them, then the rest is fine.
